Tomato Pie.

We were just introduced to this delicacy a few months ago. If you can find real, vine-ripened summer tomatoes, you will not believe how good this is.

Tomato Pie

Peeled and thickly sliced tomatoes
3 green onions with tops
10 fresh basil leaves
1 cup mozzarella
1 cup cheddar
1 cup mayo
1 pie crust

Cook pie crust according to directions. Layer with tomato, onion, basil. Mix cheese and mayo and spread on top. Cook at 350 until cheese starts to bubble.
