Tomato Bacon Casserole
8+ slices bacon, cooked
2 bell peppers
2 small onions
2 large cans(28oz) diced tomatoes
1/2-2/3 cup brown sugar
8 slices white bread toasted
Cook bacon & set aside. Add bellpepper & onion & saute. (Garlic if you like). Add tomatoes & brown sugar, S&P to taste. Simmer until some of the juice has cooked down ( 10 +min). Add crumbled bacon & crumbled toast. Put in casserole and bake at 325 for 30 minutes.
