Quick Brunswick Stew.

Quick Brunswick Stew

2 medium onions, diced
1-2 cloves garlic, minced
1/2 stick butter
1 bag (1 pound) frozen baby limas
1 bag (1 pound) frozen corn
1 14.5 ounce can petite diced tomatoes
1 8 ounce can tomato sauce OR preferably one 10 ounce can tomato puree
1 cup good BBQ sauce, such as Sweet Baby Ray's
1 quart chicken stock
1/2 tsp tabasco sauce
1/2 tsp black pepper
1/2 tsp salt
1.5 pounds smoked pulled pork from your favorite purveyor
OPTIONAL: 1 pound of pulled/diced chicken or turkey

Cook onions & garlic in butter over medium heat for about 5 minutes. Add beans & corn and cook for about another five minutes, allowing them to thaw. Add everything else, bring to a boil, then reduce to simmer for about 20 minutes. 

Serve with cheese, sour cream, etc, with good bread.
