Squash Casserole.

Squash Casserole

I typically double this. Maybe even triple the squash.

2 cups cooked, mashed yellow squash
2 cups Ritz crackers, crushed
1 cup evaporated milk
1 cup shredded cheese
1 cup chopped onion
2 eggs, lightly beaten
1 tsp. salt
1 tsp. pepper
6 TBSP butter, melted

Mix all together and bake at 350 for 40 minutes. (I typically cook it at 400, and increasing the amount increases cooking time.)
