Chewy Ginger Snaps.

These won a recipe contest on NPR.org......

Chewy Ginger Snaps

3/4 cup shortening
1/2 cup brown sugar
1/2 cup sugar
1/4 cup molasses (plus a little extra)
1 egg
2 1/4 cups sifted all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger*
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves

*For more ginger flavor, you can add crystallized ginger.

Cream shortening, sugar, molasses and egg until fluffy. Sift together flour, soda, salt, and spices. Stir into molasses mixture. Form into balls and roll in bowl of sugar. Place on greased cookie sheet. Bake in 375 degree oven and remove before they look done.
