Quick & Easy Quiche.

Improvised Quiche


We have used this recipe for years, but somehow never added it here for quick access. It's from a wonderful book called "The Good Egg" by Marie Simmons. This is perfect for throwing together things already in the fridge to use a new way.


1 cup milk, half & half, or heavy cream 

3 large eggs

1 cup grated, diced, or crumbled cheese

1-2 cups solid ingredients such as cooked veggies, diced or shredded meats, or seafood

Seasonings - your choice (salt, black pepper, garlic powder, hot sauce, dried or fresh herbs, roasted garlic, lemon or orange zest, etc.)

Store bought deep deep pie crust


Heat oven to 400 degrees. Bake unfilled pie crust for about 8 minutes to jump start the cooking process then remove. 

In a large bowl, combine the eggs & dairy choice. Whisk until well incorporated. Stir in the cheese & fillings of choice. When well incorporated, pour into pie crust. Return to oven and bake for about 35 minutes. Test with a toothpick to ensure doneness. Depending on ingredients and number of quiches being made, it can take up to an hour.

Broccoli, onion, & cheddar

Sausage, spinach, & mozzarella

Ham, onion, tomato, & swiss

Bacon, spinach & onion & gouda
